Tarocco Blood Oranges from Pearson Ranch are technically the sweetest of the blood varieties. Tarocco Blood Oranges are a medium sized blood orange variety with virtually no seeds (although you may occasionally find one). The distinctive color in blood oranges, believe it or not, is a natural mutation and not due to being a cross bred variety of citrus, as some believe.  On the inside, the red color is due to the presence of anthocyanin, the same plant compound that is responsible for the color of pomegranates. However, an interesting thing about the color of the Tarocco blood orange variety, is that they can have inconsistent coloring inside. So when it comes to the distinctive blood color, sometimes it can be the “luck of the draw” that determines how much red color you will find in each orange.  On the outside, the rind of Taroccos have very little to no coloration at all, so they will look more like a regular orange. Having long been cultivated in Mediterranean climates like Spain and Sicily, California blood oranges have been on the map a while too now. And as you know, some of the best oranges in the world come from The San Joaquin Valley of California, with blood varieties being no exception.
